After Gordon Ramsey’s Fat Cow restaurant at The Grove closed, I was curious where the talented Executive Chef Mathew Woolf would land.
He found a new home as Executive Chef of the Paligroup, which includes Palihouse, a boutique hotel in Santa Monica, Palihouse West Hollywood and Palihotel on Melrose. At Palihouse Courtyard Brasserie in WeHo, Woolf is cooking up innovative American cuisine with a British twist.
At the age of six, he knew he wanted to be a chef. In 1998, he attended the Culinary School in Chelmsford, England and later worked at the Claridges Hotel before working nearly four years at the Ritz London.
While in England, Woolf cooked for Queen Elizabeth, Prince Charles and the Duchess of Cornwall, Camilla. Woolf told me Prince Charles loved his mutton pie as the meat was from Prince Charles’ farm.“They ate simple, traditional fare,” he said.
Once in America, the chef worked in the kitchen at the Trump International Hotel and Tower in Chicago and the Fig at the Fairmont Hotel in Santa Monica, prior to his job at Fat Cow.
Executive Chef Mathew Woolf and his culinary staff prepare breakfast, lunch and dinner for hotel guests and the public. Sit on the open air patio in a garden of trees and vines overhead.
Since Chef Mathew is from Essex, England, he prepares American fare with a fun British twist. Breakfast dishes include peach cobbler pancakes, baked beans on soda bread with bacon and a healthy Pali scramble with egg whites, avocado, goat cheese, kale chips and a choice of grilled toast.
Lunch and dinner specials include comforting warm potato pillow gnocchi bathed an English pea puree with wild mushrooms or avocado hummus with house made crackers.
The treacle cured strip steak is one of the best steaks I have ever tasted. Treacle is an English molasses that is lighter in color than the American molasses. It is sweet with a slightly bitter flavor.
Sides include barbecued carrots on Ranch dressing, a delightful cauliflower dish and long and fat white asparagus sprinkled with a kick of paprika and lemon to zip up the flavors.

You must order Chef Mathew's pretzel rolls. Break one open and a luscious Cheddar cheese oozes out. This is a wonderful way to start your meal. It goes nicely with a 2012 Whitehaven Sauvignon Blanc from Marlborough, New Zealand. The wine offers fresh gooseberry and tropical-fruit flavors that linger after a sip.
Looking for a red wine to sip with Chef Mathew's steak or English Peas with ham hocks?Forefront Pinot Noir is made with 78% of the grapes are from vineyards in San Luis Obispo and 22% from Monterey County. The wine had delightful aromas of dark cherry, spiced plum and wild raspberry. The juicy acidity of the dark berry fruit goes well with the savoriness of the meat.
Roof top bar views
Downstairs in the lobby is a large bar area. After 9:30 p.m. at night, the area becomes a nightclub with up to 400 guests enjoying a Friday or Saturday night at Palihouse.
Upstairs on The Roof is one of the prettiest bar spaces in Los Angeles serving guests from 5 to 10 p.m. The bartenders make creative drinks named Moscow mules, writer's block, and a Pimm's cup. Order a cocktail and take in the amazing views of Hollywood and Los Angeles.
For larger groups, pitchers of Mimosas or Pimm's cup are $30.
Stay in one of the 37 modern residential-style oversized suites and two story condominiums. It’s a stylish compound with a top notch restaurant serving breakfast, weekend brunch, lunch and dinner. Each oversized suite has a cordless two-line speaker phone with personal voicemail, complimentary Wi-fi internet access, Carrera marble bathrooms, soothing Rain showers, luxurious European down pillows and designer bed and bath linens, flat screen LCD w/ Direct TV, Bose stereo w/ CD player, many have city and hillside views. There is an in-suite washer/dryer and fridge, high end kitchen appliances and cupboards filled with dishware, glassware, flatware and tea kettle. There is also a microwave and toaster, two top burner stove and an iron and ironing board. Hair dryers and robes are found in the bathrooms.
