Rosie's Mexican Cantina
We have been going to Rosie's Mexican Cantina for at least 7-8 years. They first opened their doors in December 1995. I am not sure why it took us so long to discover it but when we did, it quickly became our favorite Mexican Restaurant.
They have moved from the original building they were in, but only across the street. They just had to have more seating room.
Their staff is always friendly, and professional. It is a casual family atmosphere that makes everyone feel welcome.
They serve fresh Tex-Mex food and they serve it fast!
Occasionally there is a wait for a table for dinner on the week-ends but not on the food. It comes out piping hot, fresh and fast.
My husband's favorite is their Tacos Al Carbon, I am torn between their Mexican lasagna which comes with a fresh salad and their Shrimp Burrito.
Of course their Chips-n-Salsa are hot, fresh and always delicious!
Their prices range from $8-$20 an entree for dinner and for lunch you can eat for between $7-$12 per entree.
I hear their enchilada's are one of their most popular dishes, so I guess I should give them a try but its so hard when my favorites are sooo...good.

Phil Sandavol's Mexican Restaurante
Rosie's Cantina was our first love but unfortunately they are not open on Sunday. So... as we found ourselves in Huntsville on a Sunday, we decided to give Phil Sandavol's Mexican Restaurante a try.
They had actually moved into one of Rosie's first locations and their owner (Phil Sandavol), actually got his start as a server for Rosie's Mexican Cantina. They are rivals of a sort but they also call themselves family.
Their menu offers traditional Tex-Mex cuisine ranging in price from $8-$20 for dinner and from $7-$16 for lunch menu items. Again wonderful atmosphere for family, business or drinks. Great food and great service!
Although they have similar menu items as Rosie's, Phil Sandavol's has their own little signature differences that sets them apart. Here my husband usually orders their combo fajita's and I again am torn between two favorites, their Chicken Burrito which has this to die for "Chihuahua cheese sauce" and their Shrimp Enchiladas which is full of shrimp and delicious!
Little Rosie's Taqueria
Little Rosie's Taqueria, best handmade Tex-Mex cuisine for lunch or a quick night out. Yes, this is owned by the owners of Rosie's Mexican Cantina but I just could not go without mentioning it. The Rosie Family has a wonderful philosophy of good food and good service.
This little Taqueria is set up a little different, you walk up to the counter to order, get a buzzer, fix your own drinks and pick your food up at the window when your buzzer lights up.
Their menu prices range from a little over $2 for a taco to $10 for fajitas. Don't let the prices fool you, their quality is still top notch, fresh, hot and always delicious.

Maybe I am biased...
Ok, so I realize that all of these restaurants are part of the Rosie's restaurant family. Which may seem like I am limiting my scope too much, but really I have tried a lot of Mexican restaurants in Huntsville and these are just consistently the best I have come across. I am glad to hear your thoughts though.
