Carrot Salad with Raisins Recipe: Amazingly Easy
Refreshing Side Salad
This is a favorite for many. If you have never tried it, you must. Goes great with a variety of main courses, or sandwiches...even BBQ. Grate or shred fresh carrots or buy the package already shredded or grated if you are in a hurry. Very healthy too, carrots are loaded with vitamin A.
Need a quick snack? Have a bowl of carrot salad already made...have it as a snack or take some for lunch to work. Delicious!
- 4 Cups Carrots, shredded or grated, (also available in package, ready to use shredded or grated)
- 1/2 Cup Mayonnaise
- 1/2 Cup Raisins
- 1 Cup Pineapple Chunks (optional), Canned, Drained
- 1 Tablespoon Mustard
Instructions...so simple...so good!
- In medium bowl, combine all ingredients above, by tossing gently. Include the pineapple chunks if desired, optional.
- Ready to eat! May cover and refrigerate until ready to use. Enjoy!
