Eric is a husband and a stay at home Dad to 8 children. He has always enjoyed cooking and uses it as his creative outlet. Most of his meals are invented on the spot with what is available at the time. His main courses are flavorful and unique. Some specialties include "thick cut peppered bacon wrapped chicken kabobs on the grill" and "a big bowl of Thai style jasmine fried rice"
Eric started cooking as a child at home. During the 1980's he worked as a cook in popular Minneapolis restaurants and in the US Coast Guard. Now he enjoys cooking for his large family.
His recipes are easy and loosly crafted. They leave room for your own alterations and imagination. As he often says "I'll get you in the ball park".
