Cooking is Difficult

Boys don’t cook. Who says? They get hungry don’t they?

How many women chefs do you know? You better watch those cooking shows on television and see how many Jamie Oliver’s are out there.

It is funny how mothers, aunts and sisters are called cooks but men at the stove are given foreign names like ‘chef’. I’m tripping right? My apologies. We shall visit that cook vs. chef forum in another hub.

Boys and men can cook if they want to. It is very easy if you can read and write. There are millions of recipes online and the library has a whole section on cook books.

It could be a Christmas to remember if you team up with your dad and your brothers and plan cooking the dinner so that mum can relax and reminisce with friends from out of town.

The boys are doing it this Christmas, she will boast to family and friends. I don’t think she will allow you to mess with the turkey though. That’s her baby.

Kitchen Etiquette

  • No mobile phones in the kitchen otherwise something or someone might go up in smoke because you guys are watching the Gangnam video by Korean singer Psy. Psy, whose real name is Park Jae-sang crashed the YouTube counter at 2,417,483,647 because the computer never expected than more than 2 million viewers.

  • Great, mobile phones switched off. Now get as many kitchen towels as possible.

  • Cover your heads. We don’t want to see any hair in the food.

  • Wear overalls or belt up. No sagging pants please. Touching underwear and food is unhealthy.

Planning

  1. All the things you boys need are available at the local store. You do not have to order any caviar from Russia or have the latest digital stove from the Samsung collection.

  2. A planning meeting is a must and it should be held where the family will have the Christmas dinner. You want to know how big the oven is and if the kitchen can accommodate four six healthy men and boys cooking dinner.

  3. Who will cook what? Use the following recipes to divide the work.

  4. Christmas table: Ask mama about serving dishes and plates. Presentation is meant to make people hungry.

  5. Test Kitchen: Cook all menus in someone’s house before Christmas. Why? Because of quantities. You will cook maybe two cups of rice in the test kitchen, but you will cook more for 10 people. You must understand the mood swings of food you are cooking for example, basmati and wild rice react differently to heat.

  6. Test kitchen is also important for the roast chicken. Can you handle cooking four?

  7. Mama must definitely do the turkey until you guys graduate from the kitchen.

Beans and Rice

  • Beans are the only thing you will prepare overnight. For the test kitchen, soak one coffee mug of red beans.

  • Cook beans for about an hour the following day. Don't download any iTunes while you are cooking. Beans will bubble over so you need to babysit them or remove the lid. Use a teaspoon to eat a little beat to check if they are ready.

  • Cook a small sliced onion and half of a small tomato in a tablespoon of olive oil.

  • Add to the beans mixture and cook on medium heat for 30 minutes.

  • You will cook basmati or wild rice just before dinner is served.

Roast Chicken

College education was a big deal for my parents and grandparents. I was the first and the only one to go to university, so everybody chipped in financially and in kind.

Grandmother on my mother's side had a farm. She always killed a chicken for me, boiled it for hours and made corn bread the day I was to leave for the university.

However, we are using a mass-produced chicken for this recipe called a fryer. Roasting time will therefore be shorter than grandma’s chicken.

There are many ways to kill a cat. No make that roasting chicken. This is my way.

  • Pre-heat oven at 400 degrees for 20 minutes.

  • Rub salt and pepper all over the chicken. Don’t forget the inside of the bird.

  • Rub Chinese spices all over the chicken

  • Tie the legs, wrap it in foil and cook at 450 degrees for 30minutes

  • I say 30, because for my test kitchen I roasted it for an hour and it ended in disaster.

  • The chicken overcooked and clung to the foil, disfiguring it.

  • We are cooking it in foil for a reason: to extract juices we will need for the stuffing.

  • While the chicken is roasting, cook half a cup of brown and wild rice in two cups of water for 30 minutes.

  • Boil a small yam in a separate pot for 10 minutes.

  • Drain, slice and add to brown and wild rice mixture.

  • After 30 minutes, remove chicken from oven, open the foil paper and drain the juice.

  • Add it to the wild rice and yam

  • Stuff chicken with the mixture and grill for 10 minutes to get that brown colour.

Corn Boil or Grill

  • .Remove leaves from the corn.

  • Boil for ten minutes and leave to cool.

  • You don’t want to over-boil it.

  • You will need a bigger pot for the Christmas dinner.

  • You can grill corn if you like.

  • Buy more corn because of the kids. They might like it.

Kids' Menu Salmon Pasta Salad

  • Buy a 900g of rotini (pasta screws)

  • Cook half of that packet in 2 coffee mugs boiling water

  • Cook in high heat for 7 minutes then drain water

  • Cooking it longer might make it mushy

  • Cook a diced small onion and small tomato in a tablespoon of olive oil

  • Cook in low heat for 5 minutes

  • Add half a coffee mug of fresh or frozen peas

  • Cook for 5 minutes

  • Add sliced salmon pieces. Switch off heat but leave on stove.

  • You don’t need salt because peas is sweet.

  • Mix with rotini and transfer into a serving bowl.

Chicken e-mail Step by Step

  • Pre-heat oven at 400 for twenty minutes

  • Lightly salt the chicken breast fillets with salt.

  • Coat each piece with a teaspoon of olive oil.

  • The end product is sort of brownish because I used the five spices mixture.

  • You don’t have to. Salt is enough.

  • Crush cashews and roll chicken in them.

  • Place chicken breast in foil paper and fold like an envelope.

  • Roast at 450 degrees for 15 minutes.

  • Serve with boiled green beans or pumpkin.

  • Let people open their own envelopes at the Christmas dinner table. Let them cool down a bit though after you remove them from the oven.
