Edamame (Soybeans)
Found in the frozen produce section of Trader Joe's, I buy the ones labelled, uncooked. They cook up in boiling water in 5 minutes. I sprinkle with a bit of sea salt and serve.
Note: you do not eat the pod, gently squeezing the shell will allow the edamame bean to pop out easily.

Celery Sticks with Peanut Butter
Not just any peanut butter...you have to try Trader Joe's Valencia Peanut Butter with Roasted Flaxseeds, it is delicious and it is an excellent source of ALA Omega-3's.
Ingredients
- 3 medium celery stalks
- 1 tablespoon Valencia Peanut Butter with Roasted Flaxseeds
Directions
- Wash & cut celery sticks in half
- Spread peanut butter in the center of each celery stick
- Enjoy!
Air-popped popcorn
You can find corn kernels for popcorn at almost any grocer, usually in the snack aisle.
This method does require purchasing an air popcorn machine, although they are relatively inexpensive and super easy to use.
