Salads

A nice salad, can be a tasty, light meal by itself, or a perfect compliment to a main meal . I usually whip up a salad in minutes. For me, making a salad is like an afterthought, a habit, nearly every meal that I cook , is accompanied by some kind of fresh salad, It only takes minutes to prepare and it's good for you. So I have decided to write down some of my favorite salad recipes, that I hope you are going to enjoy as much as I do.

Fresh Garden Salad (Mixed Salad)

1 Classic Mixed Salad

A mixed salad pretty much compliments any meal, its great with pasta dishes, meat dishes or by itself, just add some cubed hard cheese, hard boiled egg and croutons for a delicious light meal.

Ingredients

  • 2 Tomatoes, Sliced
  • 1 Onion, Sliced
  • 1 large green Capsicum, Sliced
  • 300g Lettuce, Cut to bite size
  • For The, Dressing
  • 3 tbsp Extra virgin olive oil
  • Juice of One, Lemon
  • 6 tbsp Water
  • Salt and crushed pepper To taste

Method

  1. Place the lettuce , tomato, onions and capsicum in a large salad bowl.
  2. In a small bowl mix all the dressing ingredient together, pour onto vegetable and toss.
  3. For this salad you can use any vegetable that you like . I sometimes add cucumbers, olives or red and yellow capsicums, whatever you have in the fridge.

2 Cucumber Salad

A fresh cooling salad, great for hot summer days.

Ingredients

1. 2 cucumbers sliced thinly

2. 3 garlic cloves finely chopped

3. 1 tbsp of chopped fresh parsley

4. 2 tbsp fresh dill chopped

5. 1 cup of sour cream or yogurt

6. Salt and crushed pepper to taste

Method

In a large salad bowl , Mix the sour cream or yogurt with the garlic, dill and parsley Add salt and crushed pepper to taste , add the sliced cucumbers and toss well.

3.Fresh Baby Spinach and Feta Cheese Salad

This salad is great with any pasta dish, steamed or grilled fish, pan fried chicken breast, or on its own with some nice wholemeal bread, and a glass of delicious wine. I sometimes add crushed walnuts or sliced almonds to this salad for an extra nutty flavor.

Ingredients

1. 4 cups of fresh baby spinach

2. Half a cup of feta cheese

3. Half a cup of dried cranberries

4. 3 tbsp extra virgin olive oil

5. 3 tbsp balsamic vinegar

6. Salt and crushed pepper to taste

Method

1. Wash baby spinach, separate the leaves and place in salad bowl or plate
2. In a small bowl mix olive oil, balsamic vinegar, salt and pepper.
3. Plate baby spinach, sprinkle some cranberries and dressing on top, add some crumbled feta cheese.

4 Cannellini Bean Salad ( white bean salad )

This salad is packed with protein, tasty as a meal on its own.

1. 1 cup fresh baby spinach leaves

2. 2 firm tomatoes cut to cubes

3. 1 cucumber cut to cubes

4. I onion cut to small cubes

5. I large can of cannellini

6. I can tuna in water

7. 4 tbsp extra virgin olive oil

8. Juice of 2 lemons

9. Salt and crushed pepper to taste

Method

1. In a large salad bowl place the beans, tuna, onions, tomato, cucumber and spinach.
2. In a small bowl mix olive oil, lemon juice, salt and pepper, pour the dressing on the bean and vegetable mix and toss well.

5 Potato salad

This recipe is so easy to make. Potato salad is a great side dish for fried chicken, fish or any roast meats.

Ingredients

1. 1 kg potato

2. 2 onions cut to small cubes

3. 4 tbsp olive oil

4. 4 tbsp vinegar

5. Salt and crushed pepper to taste

Method

1. Peel the potatoes, place in a big pot of water and boil for 30 minutes or until cooked.Once cooked, drain the potatoes and leave on the side to cool .
2. In a bowl mix olive oil ,vinegar and salt and pepper.
3. When potatoes are cool, cut to bite sized pieces, add chopped onions and dressing, toss well.
