Spring is coming up real fast so what better way to take advantage of the warmer weather by eating some healthy and tasty salad. There is nothing better than bringing the taste from the grill to a fresh salad and that's what we going to do here today were going to put together a simple salad that will kick off the spring for you, a fresh B.B.Q. Chicken Salad using items that you might have in your freezer and cupboard.

Making this great salad will serve 8 people, and I promise you your friends and family will be talking about how good it is.
Ingredients
2/3 cup of ranch dressing divided
3 tablespoons of barbecue sauce
1 pound of boneless skinless chicken breast
2 medium red onion, cut into 1/2 inch thick slices
6 cups of romaine lettuce
2 cups of green leafy lettuce
1 can of black beans, rinsed and drained
1 cup of whole kernel corn
Methods
What you have to do is combine 3 tablespoons of your favorite ranch dressing along with 3 tablespoons of barbecue sauce in a small bowl.
Pour the dressing mixture over the chicken breast in a large shallow baking dish ( do not use aluminum ). turn to coat pour the remaining dressing mixture over the red peppers and onions in another another baking dish. Cover baking dish and refrigerate at least 3o minutes, turning once.
Remove chicken and vegetable from marinades. Grill or broil vegetables and chicken turning and brushing with reserve marinades, until vegetables are tender and chicken is thoroughly cooked, about 15 minutes,Thinly slice chicken and peppers and chop onion.
Now all you need to do is arrange lettuce on serving platter, then top with beans, corn, chicken and vegetables.
