Baked Salmon with Ginger Relish
Makes about four servings.
Ingredients
- 2 pounds king salmon
- 1/4 onion, chopped
- 1 garlic clove, chopped
- 1/2 inch piece ginger, fresh, peeled & chopped
- 1 tablespoon clam juice
- 1/2 teaspoon lime zest
- 1/2 teaspoon cayenne pepper sauce
- 1/2 teaspoon olive oil
- black pepper
- garlic powder
- Preheat oven to 400 degrees with rack in the middle. Prepare baking dish with sides by lining with parchment paper with enough length to cover fish. Rinse fish and place atop parchment paper. Combine onion, garlic, ginger, clam juice, lime zest & cayenne pepper sauce in a mini food processor to make relish.
- Spread relish atop fish using spatula to cover evenly. Drizzle with olive oil and season with freshly ground pepper & garlic powder. Cover with parchment paper and bake for about 20 minutes or until fish flakes easily. Serve fresh from the oven with sliced lime. Serving suggestion: serve with cooked rice.
