Itaian Sausage Two Ways

lf you love have a love of sausage like I do then you will love these two recipes I want to share with you.

One of the recipes is a tasty medley bursting with flavor and color and the other is a casserole type dish that is made with penne pasta and tomato sauce either way they are both great so please follow me on this recipe journey.

When I make my Italian sausage medley I use 3 fresh Italian sausage, a 1/2 each of yellow, red and green bell peppers, 1 medium white onion, 1 can of Italian dice tomato, olive oil, 1 clove of garlic and a pinch of salt and pepper for tasting

Now to put this all together I cook of my sausage by adding a little bit of olive oil in to a hot skillet then I cook the sausage on a medium heat and brown them for about 8 minutes then I add 1/4 cup of chicken stock and simmer for 10 minutes when done set aside.

While the sausage is cooling take your bell peppers, white onions and slice them julienne style pour out any liquid that's left inside of the pan add a little bit more of olive oil Peel your garlic slice it and add it in the pan then add your peppers and onions and saute for about 2-3 minutes.

While your peppers and onions are sauteing take your sausages and slice them into coins then add them in the pan with peppers and onions then pour your Italian diced tomatoes on top and mix well and let cook for 4-5 minutes to blend in all the flavors then serve.

Italian Sausage Casserole

Casseroles to me is a dish that you just throw all together add a tasty sauce then bake it off and were going to do just that but we are going to make layers of flavors as we cook it.

The first thing we are going to do is get,1 medium onion chopped, 1tsp minced garlic, 2 tbsp of extra virgin olive oil, 10oz of chicken stock, 1 tsp of white pepper, 1 lb of sweet Italian sausage cut in half and quartered, 1 green pepper quartered lengthwise, 4oz of penne pasta, 1 cup of grape tomatoes, cut in half, 1/3 cup of fresh basil chopped, 1 100z can of tomato sauce, 1/2 cup of shredded Parmesan cheese.

Using a large skillet cook onion and garlic in 1 tablespoons of olive oil over a medium heat for 5 minutes then add your chicken stock, white pepper and bring to a full boil then reduce to a simmer and let simmer for 10 minutes

Using a medium fry pan on a medium heat fry sausages turning frequently for about 12-15 minutes then add in your Green peppers and cook for 2 minutes longer. Cook pasta following the directions on the package, then drain.

Combine all the ingredients into the large pan add the tomatoes, basil and pasta along with the tomato sauce mix well then pour into our casserole dish top it with the Parmesan cheese and bake in the oven for 15 minutes at 350 degrees remove let it rest for 10 minutes then serve.
