Chocolate Chip Shortbread Cookies
Delicious Chocolate Chip Shortbread Cookies
This is a recipe that I have tweaked into my own version of a classic shortbread. Dark chocolate chips add a decadent twist but can be omitted if desired. This simple recipe is easy to prepare and also freezes well, it is usually the first of my Christmas baking to go in the freezer, and thaws easily when needed.
Chocolate Chip Shortbread
Mix together: 1 lb butter (1 large foil block)
1 cup rice flour
2 cups all purpose flour
1 cup cornstarch
Add: 1 cup berry sugar
2 egg yolks
1 cup dark chocolate chips
Knead together by hand. By heaping tablespoon, hand roll into balls, then press down lightly onto a greased cookie sheet with the back of a fork or a cookie press. Bake at 350 degrees for about 12 minutes until golden brown on edges. Sprinkle with berry sugar if desired.
