Easy Crock Pot Italian Chicken Stew
Cooking in a crock pot is always convenient. However, in winter it is especially appealing to have a nice, warm dinner waiting for you when you get home from a busy day. During the holidays, when there is even more activity than usual, a crock pot meal can keep you from ordering pizza... again.
This recipe for Italian chicken stew is one I created myself as a meal that is both low-carb and delicious. If you are not trying to reduce your carbohydrates, a side of pasta is a great addition to this meal--though it is absolutely delicious by itself.

Ingredients
- 1 pound Boneless chicken breast, in chunks or strips
- 1 large Zucchini, chopped
- 1 large Onion, chopped
- 1 Bell Pepper, chopped
- 1 small can Mushrooms
- 1 can Diced italian-style tomatoes
- 1 packet Italian salad dressing mix
Instructions
Add all ingredients to the crock pot. I drain the can of mushrooms, but leave the tomatoes as-is. Replace the lid and allow to cook. I normally put it on a medium low temperature and cook for around 6 hours; however, you can adjust the time based on the temperature at which you cook..
