Easy Pecan Cake
This is a depression era recipe I have renamed. The poor thing was called sad cake but my kids and I decided this tasty treat needed a better title that didn’t sound quite so…well depressing.
Because it came from a vintage cookbook I had to redo the measurements because it listed things like a 10¢ package of biscuit mix. I can just see a poor store clerk looking at me like I was out of my wits if I requested such an item. Let’s see in today’s standards that would probably be what, a teaspoon maybe? :o)
This cake goes well with tea or coffee. Where I come from such treats are called coffee cake.
1 ½ cups biscuit mix
2 cups brown sugar
4 eggs
1 cup pecans
1 teaspoon vanilla
Mix well, pour into a greased square baking dish (approximately 8X8 inches) and bake at 350° for 30 minutes. Turn oven off and let sit in oven for 15 minutes more.
Serve warm or cool. You can sprinkle with powdered sugar or right before serving put a dollop of whipped cream on top if you like but they are just as good plain.
