Coke Roast

This is my scratch recipe, and it may vary every time I make it, but you can take the basics and make it suitable for your family. It is very yummy, since it's slow cooked, it's great for Sunday suppers.

1 average beef roast

1 can of Coke

1 can of cream of mushroom

1/2 or 1 yellow onion

2 cans of carrots

4 potatoes or more if you'd like

Fresh mushrooms

Salt and Pepper to taste

I use my oven proof stoneware 1 gallon bean pot, but any oven proof pan would work, make sure it's covered.

Stabb your roast where flavor can soak in. Reasonably salt and pepper meat. Dump in can of soup and can of Coke. Add thinly sliced onion and fresh mushroom to the rest of the contents cover and put into oven. I heat oven to around 325 degrees and cook for 5 hours, it is very very tasty and tender like this, but you can decide according to how your oven cooks. 1 hour before roast is finished add the potatoes and carrots.............My kids like the juice for gravy over bread.

Easy Chicken And Dumplings

1 whole chicken

11/2 to 2 cans of biscuits

Salt and Pepper to taste

Boil chicken, debone and put back into broth. Add salt and pepper to taste. Make sure the broth is at the boiling point. Pull off small pieces of biscuits and drop into the boiling broth. Cook for several minutes until dumplings are cooked through. This is super easy, yet very yummy. The dumplings allot of time make a little gravy texture, similar to Cracker Barrels. P.S. Kids favorite :.) Note: You can also roll out the biscuits and flour them, let them dry awhile then they make more noodle like dumplings.

Taquito Enchiladas

1 pkg of taquitos

1 lg can of cream of chicken

1 container of sour cream

Rotels optional

2 cups of shredded cheese

Spread out taquitos in a large casserole dish or pan. Mix sour cream and cream of chicken together and spread over taquitos. Sprinkle all the the cheese on top. Bake at 375 degrees until done.

I've got to try your roast, sounds wonderful. Wonder how it would do in a crock pot?
