Flaco's Chili Recipe
This is a simple recipe that takes little time to prepare. The ingredients are simple and available almost every where and more than likely they are already in your cupboard or pantry. It is a medium spiced chili with a smooth consitency. I do not use tomato sauceor paste, just fresh or canned diced tomatoes. It goes really well with macaroni or noodles if you are craving chili-mac or spaghetti topped with cheddar cheese (something my wife likes from Skyline). I also use this recipe when making chili cheese dogs and chili cheese fries/potato tots. This recipe has won two very small unknown chili contests since I started making this recipe. Others thought it was a winner, I hope you do too.
Ingredients
- 1-1.5 Lbs, Ground beef, preferably 80% lean or better
- 15oz. Pinto Beans
- 15oz. Dark Kidney Beans
- 15oz. Black Beans
- 15oz. Light Kidney Beans
- 1/2 cup Taco Seasoning
- 26oz. Stewed Tomatoes
- 15oz. Refried Beans
- 3 tsp. Hot Sauce
- 8oz. Water
- 3TBS Dried Onion
Preparation
- Brown ground beef for 6 minutes in a 4 to 6 quart pot with lid on medium high heat. While frying the beef use a spatula to break beef into small pieces. Drain fat from beef and add Taco seasoning, continue to cook beef addtional six minutes.
- Add the beans, stewed tomatoes, dried onions, hot sauce, refried beans, and 8 oz of water to the pot with the ground beef. Stir until the refried beans have dissolved into the chili mixture. Hint: When the refried beans are fully dissolved into liquid form, the spoon will not have any solid refried bean residue sticking to it.
- Heat on Medium high until chili is boiling. Be sure to stir chili every minute or so until to keep the chili from sticking to the bottom of the pan.
- Once the chili has begun to boil, reduce heat and cover pan, simmer for 5 to 10 minutes.
