Chicken Roasted With Garlic
Chicken, Chicken, Chicken.....what can I say, it's one of Amercia's favorite foods, I love it every way you can cook it from fried to stewed, it really dose not matter it's that good.
One of my favorite way of cooking chicken is roasting in with the flavor of garlic going straight through it, the smell that seeps out of the oven is delectable and the finish product is a crispy golden brown piece of heaven.

This is one of the most tatalizing ways of roasting a chicken and a garlic lovers dream. The chicken is cooked surrounded by whole garlic cloves that, as well as scenting the chicken flesh,emerge meltingly soft and creamy. Any potato from roasted to mashed or gratin dauphinoise will do alngside, and some watercress or other salad to mop up the garlicky juices afterwards.
Ingredients
4 head of garlic
31/2 pound oven-ready chicken (preferably free-range)
4 tablespoons unsalted butter
sea salt, black pepper
Juice of 1 lemon
Preheat the oven to 375F. Slice the top and bottom off the heads of garlic, separated out the cloves, and peel them. Tuck several cloves inside the chicken's cavity with half of the butter. Place the chicken in a roasting dish and smear the remaining butter over the skin. Season with salt and pepper and pour over the lemon juice. Roast the chicken for 30 minutes, then scatter the garlic cloves and around the bird, basting them and the chicken with juices. Roast for a further 25 minutes.
Loosely cover with foil and leave to rest in a warm place for 20 minutes. Tip any juices inside the bird into the roasting dish and gently reheat these and the garlic cloves. Carve the chicken and serve on warm plates with the roasted garlic cloves, spooning the pan juices over....Enjoy.
