Grilled Turkey with a Black Bean Sala
1 teaspoon of ancho chili powder
1 teaspoon of cumin
1 1/2 teaspoon of salt
1/3 teaspoon of cayenne pepper
1 pound turkey tenderloins
1/2 cup chopped onion
1 jalapeno pepper, seeded and chopped
1 teaspoon of olive oil
15-ounce can of black beans, rinsed and drained
8-ounce can of corn, drained
1/2 cup chopped tomato
2 1/2 tablespoons chopped fresh cilantro
1 lime
Combine the chili powder, cumin, salt and cayenne pepper in a small bowl. Sprinkle half the mixture over the turkey then let this mixture marinate for 45 minutes to one hour. Remove the tenderlion from the marinade then grill the tenderloins for 15 to 20 minutes, turning once, or until the meat is no longer pink in the center and a meat thermometer reads 160 degrees. Allow tenderloins to stand 10 minutes before serving to keep all of the juiciness in the meat.......Mean while.
Saute the onion and jalapeno pepper in oil in a medium, nonstick skillet over a medium-high heat, 2 to 3 minutes or until onion softens. Add the beans, corn, tomato, cilantro and remaining chili powder, cumin, salt and cayenne pepper mixture. Cook 25 to 30 minutes or until the mixture is heated through. Then serve . Squeeze lime juice over each serving. Enjoy
