The Best Pizza Dough for Grilling

Makes 8 small pizzas

Ingredients

Vegan

Baking & Spices

  • 1 tsp Active dry or instant yeast
  • 5 cups All-purpose flour
  • 2 tsp Salt

Oils & Vinegars

  • 1/4 cup Olive oil

Liquids

  • 1 2/3 cups Water


Mediterranean Grilled Chicken and Roasted Red Pepper Pizza with Feta and Balsamic Glaze

Ingredients

Meat

  • 1/2 lb Chicken breast

Produce

  • 3 clove Garlic
  • 1/2 Lemon, juice and zest
  • 1 tsp Marjoram

Condiments

  • 1/2 cup Balsamic vinegar

Baking & Spices

  • 1 tbsp Brown sugar
  • 1/4 tsp Pepper
  • 1 Pizza dough
  • 1 Red pepper, roasted
  • 1/4 tsp Salt

Oils & Vinegars

  • 4 tbsp Olive oil

Dairy

  • 1/2 cup Feta
  • 1 cup Kasseri or mozzarella

Directions


FOR THE CHICKEN:

    1. Mix all of the ingredients except the chicken, place in a sealed container along with the chicken and let marinate in the fridge for 30 minutes to overnight.
    2. Grill the chicken over medium-high heat until cooked, about 3-6 minutes per side, before setting aside to rest for 5 minutes and slicing.
FOR THE BALSAMIC DRIZZLE:
    1. Bring the balsamic vinegar and brown sugar to a boil, reduce the heat and simmer until it has reduced by half and thickened, about 10-15 minutes.
FOR THE PIZZA:
  1. Shape the pizza dough into the desired form on a baking sheet, brush with the mixture of the olive oil, garlic and oregano, sprinkle on the cheeses, chicken and roasted red peppers.
  2. Bake in a preheated 500F/260C oven until the cheese has melted and the crust is crispy and golden brown, about 10-15 minutes.
  3. Drizzle the balsamic reduction on the pizza and enjoy!

Option: Serve with tzatziki for dipping.
Option: Add red pepper flakes for heat.
Option: Add kalamata olives and/or red onions.
Tip: Make a big batch of the balsamic reduction and store it in your fridge.

  • 1 cup Whole milk mozzarella cheese

INSTRUCTIONS

  1. Follow the instructions here on how to grill pizza dough then, once dough is done, top with marinara sauce, cheese, and tomatoes. Return to grill (on low) and grill until cheese is all melted and ingredients have been warmed through. Garnish with basil on top.
  2. Slice and serve.

Jalapeño Popper Pizza

Ingredients

Meat

  • 4 slices Bacon

Produce

  • 2 Jalapenos
  • 1 Shallot

Baking & Spices

  • 1 ball Pizza dough, homemade or store-bought
  • 1/4 cup Semolina or yellow cornmeal

Oils & Vinegars

  • 2 tbsp Olive oil

Dairy

  • 6 oz Cream cheese
  • 1 1/2 cups Jalapeno monterey jack cheese, grated

Instructions

  • Preheat oven to 475 degrees F. Lightly coat a baking sheet or pizza pan with olive oil.
  • Heat a small skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
  • In a small bowl, combine the jalapeños and shallot with 1-2 teaspoons olive oil.
  • Working on a surface that has been sprinkled with semolina or cornmeal, roll out the pizza dough into a 10-inch-diameter round. Transfer to prepared baking sheet or pizza pan.
  • Spread the cream cheese evenly over the top, leaving a 1-inch border. Top with jalapeño monterey jack, jalapeños, shallots and bacon.
  • Place into oven and bake for 15-20 minutes, or until the crust is crisp and brown on the bottom and the cheese is melted on top.
  • Cut the pizza into wedges and serve immediately.

Roasted Garlic White Chicken Pizza

Ingredients

Meat

  • 5 1/2 cup Chicken breast, boneless skinless cooked and shredded

Produce

  • 8 cloves Garlic, roasted
  • 1/2 tsp Oregano, dried
  • 1 tbsp Parsley, fresh
  • 1/4 cup Red onion
  • 1 tsp Thyme, fresh

Baking & Spices

  • 2 tbsp All-purpose flour
  • 1/2 tsp Black pepper
  • 1 lb Pizza dough

Dairy

  • 1 tbsp Butter
  • 1/4 cup Half and half
  • 3/4 cup Mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1/2 cup Skim milk

Instructions

  1. Preheat oven to 450 degrees. Prepare a baking sheet with a siplat liner, or grease and sprinkle with cornmeal.
  2. Melt butter in a small saucepan. Saute roasted garlic for 1 minute.
  3. Add flour, and mix until well blended. Cook for 1 minute.
  4. Slowly whisk in the milk and half and half. Mix in the pepper.
  5. Cook for about 3 minutes, or until it starts to thicken. Remove from heat, and stir in Parmesan cheese.
  6. Spread dough into roughly a 12 inch circle on prepared baking sheet. Spread white cause over the dough. Top with chicken, red onions and cheese.
  7. Bake for 17 minutes, or until the crust is golden, and the cheese is melted.
  8. Remove from the oven, sprinkle with herbs. Cut and serve immediately.

Chicken Bacon Ranch Flatbread Pizza

Ingredients

Meat

  • 1 cup Chicken
  • 1/4 cup Hormel bacon pieces

Condiments

  • 1/4 cup Ranch dressing

Oils & Vinegars

  • 1 tsp Olive oil

Bread & Baked Goods

  • 1 Flatbread

  • 1/2 cup Mozzarella cheese

Instructions

  1. Preheat oven to 400(f) degrees. Brush olive oil evenly over Flatbread and bake for 4-5 minutes or just enough to crisp the crust.
  2. Carefully remove from oven. Spread ranch dressing over crust then add the chicken and cheese.
  3. Crumble bacon on top then place back in oven and bake for an additional 4-5 minutes.
  4. Carefully remove from oven and let cool for a few minutes before serving.

Chicken Pesto Pizza

35 mins to make, serves 6

Ingredients

Meat

  • 1 lb Best grilled chicken

Produce

  • 2 Basil, sprigs
  • 2 bunches Basil
  • 2 Garlic cloves
  • 1 Lemon, large

Baking & Spices

  • 1 Red pepper flakes
  • 1 batch Rustic pizza dough

Oils & Vinegars

  • 1/2 cup Olive oil, extra virgin

Nuts & Seeds

  • 1/3 cup Walnuts

Dairy

  • 1 1/2 lbs Pepper jack cheese

INSTRUCTIONS

  1. Prepare your pizza dough according to the recipe directions.
  2. To make the walnut pesto, add the basil leaves, walnuts, garlic, olive oil and lemon juice to the bowl of a food processor and puree until smooth but still with a little bit of texture. Adjust seasonings to your taste with sea salt and refrigerate until ready to use.
  3. Preheat your oven to 500”F with the pizza stone in it for at least 45 minutes or longer.
  4. Sprinkle some flour on your kitchen counter or over a pastry board and place one of the pizza dough balls on top. Sprinkle with some flour and using the palm of your hand gently press down on the dough until flat.
  5. Flip the dough on the other side and sprinkle some more flour on top if needed. Continue to press down with the palm of your hand and gently stretching the sides until the pie is thin too your liking. You could also use your knuckles and help stretch the dough as well, just be careful not to tear it.
  6. Sprinkle some flour on your pizza peel or cardboard and gently place the dough on top.
  7. Sprinkle a little flour or corn meal on top of the pizza stone in the oven and very carefully transfer the pizza pie to the pizza stone. Just give the pizza peel or cardboard box an nice little shake and it will slide right in.
  8. Bake the pizza pie for 3 minutes then remove it from the oven back to your pizza peel.
  9. Spoon a thin layer of the walnut pesto over the top and layer with the pepper jack cheese slices. Sprinkle the grilled chicken on top and a little bit more pepper jack cheese.
  10. Gently transfer the pizza pie back to the hot pizza stone and bake an additional 5 minutes or so , until the cheese has melted and the crust is crispy.
  11. Repeat with the remaining pizza pies and allow each pizza to rest for a few minutes for the cheese to set before cutting into it. Sprinkle with the fresh basil and enjoy with extra red pepper flakes on top.

  1. Preheat oven to 350 degrees
  2. Assemble pizza by layering on alfredo, chicken, canadian bacon, mozzarella cheese, and a sprinkle of parsley.
  3. Bake for 8-10 minutes until cheese is melty
  4. Slice and enjoy!
