My Homemade Belgian Waffles with Oven Baked Bacon

Hello again! This morning I decided to make my homemade Belgian waffles with some oven baked bacon since it's Spring Break and my daughter is out of school and my wife is off work today! As a matter of fact my wife is eating her plate as I type! I love breakfast and I have no problem having what might be considered breakfast food for brunch, lunch or dinner! These waffles are great anytime of day or night! Fresh, hot buttered Belgian waffles with syrup, oven baked bacon and some fresh fruit! What could be better than that? I want to share with you how I make this delicious meal so let's get started!
My Homemade Belgian Waffles with Oven Baked Bacon
- 2 cups self rising flour
- 1/2 tsp salt
- 1 tbls sugar
- 2 eggs, beaten
- 1 3/4 cup milk
- 1/4 cup cooking oil or butter
- 1 tsp vanilla extract
- Sliced bacon
Mix the flour, salt and sugar in a large bowl. Add in the eggs, milk, oil and vanilla. Stir only until mixed. Ladle batter into hot waffle iron and close lid. Allow to cook until steam stops escaping. Remove waffle from iron with a fork and repeat process to make more waffles.
For the bacon, preheat your oven to 375 degrees. Lay bacon slices on a baking sheet in a single layer making sure they do not overlap each other. Bake for 16 to 18 minutes, remove from oven and drain slices on paper towels. I like to cook bacon this way as it is much less messy and you can make alot of it easily and quickly!
Butter your waffles and serve on warm plates with syrup, bacon and any fresh fruit you like. I like ribbon cane syrup (country syrup) on my waffles and a cold glass of milk or orange juice with this meal!
