Easy Healthy Homemade Salmon Patties

- 2 regular can Salmon, Red or Pink
- 2 cans Liquid from canned salmon, use in paste mixture
- 1 medium Onions, chopped
- 1 large Sweet Bell Peppers, chopped
- 2 tbls Cajun Seasoning, divided
- 2 large Eggs
- Extra Virgin Coconut Oil, for frying salmon patties
- 1 half cup Spelt flour, use in paste mixuture
- Combine salmon, eggs, chopped onions, chopped sweet bell peppers, one tablespoon Cajun seasoning in a large bowl. Use more or less Cajun seasoning to suite your taste.
- In another bowl combine spelt flour, one tablespoon Cajun seasoning and liquid from the two cans of salmon. Use more or less Cajun seasoning to suite your taste. Use enough liquid to make a thin paste so the patties can cook through.
- Next add paste mixture to salmon mixture. Combine ingrediants so the mixture holds together.
- Melt enough extra virgin coconut oil to cover the bottom of the frying pan. Set the temperture on low medium.
- Use of a one third measuring cup to scoop mixture into frying pan. Place patties in frying pan and fry until patties are golden crisp on each side and cooked through. May need extra oil for the full batch of salmon patties.
