How to make Mexican enchiladas

Want to know how to do Mexican enchiladas? or maybe you are just curious about mexican food then this article might be for you. First off I learned how to cook because my mom taught me and with her I learned how to make this popular food that is popular in different parts of Mexico also to say that a lot of people like this food. One awesome thing about enchiladas is that it is a delicious food made out of tortillas and chili (either red or green) I love both of them and now I want to share with you the wonders of mexican enchiladas and how they are made step by step they are easy to make.

What you will need:

- 12 corn tortillas

- 1 medium onion chopped in squares

- 1 handful of garlic chopped into small pieces minced

- 1 cup of salsa you can make one of your own with cooked or canned tomatoes, green chilies,onions,cilantro,oil and vinegar. Tip- do not use uncooked tomatoes to make the enchiladas.

- 3 tablespoons of tomatoe paste

- 1 cup of water

- Olive oil

- 1lb of jack cheese,cheedar cheese, or any type of yellow cheese (carefully and nicefully grated)

- sour cream

- 1 half of green lettuce

Instructions:

Preheat oven to 350 degrees F.

In a large frying pan of your own put 3 spoons of grapeseed oil as you do this start adding the tortillas to the pan with the grapeseed oil. Then you let it cook for 2 to three seconds on one side of the tortilla then you flip the tortillas over so they can cook from the other side then when the first tortillas are done you add more but as your tortillas are done cooking make sure to put them on a plate and cover them to keep them warm. Also keep on adding more oil as you go so the tortillas can cook well. The reason for this process is so the tortillas can get some flavor in them leave the tortillas to brown a little and to remove excess fat put them on a paper towel to absorb the oil and not let it stay on the tortilla.

Put some olive oil on the bottom of the pan then after that take a tortilla and cover 2/3 of the tortilla with the shreded cheese then roll the tortilla and then put it on the pan. You continue doing the same thing over and over again with the rest of the tortillas after doing that you wet the tortillas with the salsa and the cheese. When done send the enchiladas to the oven and leave them until the cheese melts well usually for 10 minutes.

Finally when done with the enchiladas you can serve them with cut cilantro,lettuce,creme on top and cut squared onions to get the perfect taste.
