Water Coconut Kefir

VERY IMPORTANT!
Should note that all containers and ustensils below shall be of plastic and/or glass.

= A 3 liter glass jar with lid.
= a large colander (about 30 cm. diameter) with holes of 2/2 mm
= a funnel
= a plastic spoon (wooden spoon is contraindicated)
= a plastic and/or glass bottle for a half liter to preserve kefir.

Pour out the coconut water into the larger glass jar and drop the kefir grains in. Do not tighten a lid over the jar. Keep the air flowing. Wrap a towel over and around the jar and keep in a warm place for 36 to 48 hours – maybe longer depending on the indoor temp (you want it warmer for these kinds of ferments).

That's it! You can taste it, it should be a little sour and acid.
