How to make delicious and healthy vegetarian meals in 30 minutes?
Healthy Vegetarian Pizza
I grew tired of the high fat, expensive and unhealthy pizzas available from pizza shops or frozen. Then I discovere flat-bread (we use Flatout brand) and decided to make my own pizza. It is eash, fast, delicious and very healthful.
This recicpe makes two servings.
2 Pieces of flat bread
1 TBS Oil (EVOO,Canola, sesame, whatever you like)
1 small red onion - chopped
1 small red sweet pepper sliced
1 small tomato
1 clove of chopped garlic
Basil (Fresh if possible)
1 1/2 cup of shredded soy chees (Veggie Shreds)
2 oz of freshly grated Asiago cheese (I use a potato peelier to make large shredded pieces). Asiago cheese is similar in taste and texture to parmesan, but I prefer it's flavor.
1. Preheat the oven to 375F
2. Brush the flat bread with the oil and place on a cookie sheet. Put into the oven while you prepare the toppings - or about 8 minutes. This will help keep the bread from becomming soggy from the juices or the fresh veggies.
3. Remove the crusts from the oven and sprinkle each with half of the assiago cheese.
4. Add the veggies.
5. Top with the remaining cheese.
6. Bake approximately ten minutes - or until the chees is melted and the edges of the crust are lightly browned.
Now you can have gluten free pizza!
