Fresh from your garden, if you're lucky, baby asparagus is a tempting treat. Now that I have discovered this, I can just envision you gardeners in the plot snapping it right off the stem and popping it in your mouths.
In the past I grilled asparagus and experimented with it raw, coating it with various combinations of olive oil, lemon, salt, and basalmic vinegar. After washing mine the other night and drying in in a bowl with a towel, it looked so good and fresh, I just ate it! Plain! What a wonderful surprise. I sat with the entire bowl in front of the television with a glass of red wine. No need for any other enhancement.
Asparagus in high in potassium, antioxidants rutin and glutathione, and several B vitamins. It is low in calories and has no fat or cholesterol. Enjoy it sans condiments and it's less than 4 caleries per spear.
