Easy Mango Cream Dessert!

Ingredients

  • 2 Mangoes
  • 2 T. Coconut oil
  • 2 t. Lemon juice
  • 2 T. + 2 t. Agave
  • 1 1/2 t. Cardamom
  • 1/2 t. Fennel seed
  • Pinch Sea salt
  1. Place coconut oil in dehydrator to melt. Combine mangoes, lemon juice , 2 t. agave, cardamom, fennel, and salt into blender. Blend and you will have about 2 cups puree.
  2. Pour 1/2 cup portions into dessert cups. You should have about 3 servings depending on the size of the mangoes. Put in freezer to cool. Leave 1/2 cup of puree in the blender and add 2 T. agave and the melted coconut oil. Blend.
  3. Layer the coconut oil mixture over the darker mango puree in a layer or a design. Garnish with fennel seeds or mint. If using fennel for garnish, it's softer if you let it sit on the cream a bit before serving. Serve well chilled.

Is there an option instead of coconut oil? I cannot do coconut.

Thanks for commenting. A raw food option could be cashew cream, cold, not melted.
