Sopiopilla
Ever ordered a sopiopilla from your favorite local restaurant? You will be surprised at how easy they are to make.
You will need..
Canned cinnamon rolls
Honey
Cinnamon
Flatten cinnamon rolls out till they are thin. To get the full size of restaurants, they use two together.
Deep fry
Let sit a few moments then sprinkle with cinnamon and top with honey.
Fried Ice Cream
This has always been one of my favorite, although depending on where you go. Some restaurants do not fry the ice cream at all, merely cover it in frosted flakes. This is unacceptable in my mind.
You will need..
Vanilla Ice Cream
Graham crackers
Honey
Make several balls out of the ice cream, you choose the size, the quickly roll in crushed graham crackers. Refreeze the balls immediately for at least an hour. Please note, you can make up several ahead of time and wrap in aluminum foil, they will stay viable for at least a month.
For the next step a deep fryer would be optimal, although a small amount of grease on high heat in a pan can work as well. Flash fry the ball quickly- 3 seconds for deep fryer. For pan method, quickly roll the ball around in med high heat oil. If your ball starts leaking too much ice cream, stop and top.
Best served with just a little honey on top, although go all out with chocolate, whip crem and nuts if you so choose.
Dips
So what are corn chips, without dip?
Guacamole
You will need...
6 avacados-pitted and scooped
2 teaspoons garlic powder
1/4 cup of lime juice
1 small onion diced
1 tomato diced
1 jalapeno-fresh diced
1 teaspoon of salt and pepper
2 tablespoon of fresh chopped cilantro
Mix all ingredients in to a large bowl. For a smoother texture, blend or put in a food processor.
Pico De Galllo
A wonderful onion salsa that is a great topping for tacos, salad or as a nice dip
You will need...
2 onions- diced
1 large tomatoe-diced
1/4 cup of fresh finely chopped cilantro
1/4 cup of lime juice
salt and pepper to taste
Mix in large bowl and serve
Black Bean and Corn Salsa
This is an add on to the above recipe for pico de gallo.
You will need...
1 can of rinsed and drained black beans
1 cup of thawed frozen whole kernel corn
With above recipe mix in bowl and enjoy. To add a little kick, just add a bit of finely chopped fresh jalapenos.
