My Creamy Chicken Macaroni Salad for the New Year 2016
Long time ago when my two adult and now parents themselves children were still kids and while I was still married to their father (now deceased) I had a favorite recipe which I only cook for the New Year.
If I remember right I had not done this for the past 25 New Years; why now?
When I left my husband in 1993, he went on to live with his mistress as I also found a new love. My son who was then newly married opted to stay in our old house where accordingly in one of the New Years after I left, his father, tagging along his new wife went to visit him; in this occasion the father ordered his new wife to cook a chicken macaroni salad. Chicken macaroni salad was a traditional food I prepare for the family every New Year. The story goes that Lamurin (my ex) did not like the macaroni salad that his new wife cooked; accordingly he commented “no one ever cooks macaroni salad as deliciously as Jenny (that’s me) does.
Is it not flattering to hear such story about me?
So here we go…I will share how I cooked the macaroni salad that I now have cooked for this New Year 2016…my inspiration to do this again after so long is because I have a new-born grandson who is so gorgeous; it’s like life had cycled again through him, he is a close resemblance to my son at birth.
The chicken macaroni salad:
Ingredients:
1 ½ kilos macaroni
1 kilo mayonnaise
½ kilo chicken
1 pound cheese
Three cans of cream ilk
Two pouches of nestle cream
2 cans of condensed milk
2 bottles of red kaong
2 bottles of green kaong
2 bottles of white kaong
½ kilo dried raisins
Procedure:
Cook the macaroni altogether.
Boil the chicken; spread a little salt and seasoning to taste.
Once cooked shred the chicken in thin strips and set aside.
Mix all ingredients in a big salad bowl beginning with the macaroni followed by the mayonnaise and so forth; I also put the syrup from the kaong to make the salad tastier and sweeter, this way I don’t use sugar anymore. Once done empty the salad bowl and put everything to smaller containers then put the containers in the freezer.
The salad is more delicious when frozen.
Chicken Macaroni Salad is a nostalgic and traditional New Year food for my family; it reminds abundance and prosperity to each member, particularly my son and my daughter. It’s sort of aphrodisiac food for the New Year.
