Orange Vanilla Waffles
Makes approximately 16 waffles. Serves about 16.
Ingredients
- 1/2 cup agave
- 1/2 cup walnut oil
- 4 eggs
- 4 teaspoons orange zest
- 4 teaspoons orange juice
- 4 teaspoons vanilla
- 1 1/2 cups whole wheat pastry flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup milk
- olive oil
- In large mixer bowl, mix together agave and walnut oil. With flat beater attachment or whisk, add eggs one at a time, until thoroughly mixed with agave & oil. Add in orange zest, juice and vanilla; set aside.
- In a large bowl, stir flour, baking powder and soda. Add to liquid mixture, in three parts, alternately with milk, in two parts. Combine just until blended. Please note: batter is extremely thick.
- Season waffle iron with olive oil, as needed. Preheat waffle iron to desired setting. Using large cookie dough scoop or 1/3 cup, drop batter onto preheated waffle iron. Bake to desired doneness.
- Cool waffles on wire rack. Serve warm with melted butter and maple syrup. Waffles can be refrigerated for future use. Reheat to serve warm.
