Peach Pie, a summertime delight
The best pie in the world!
Here's a recipe for peach pie that will knock your socks off! It is easy to follow, easy to make, and a real winner to bring to a party. Warning...this one is not a low calorie recipe.
For the crust...
40 round butter crackers
3 tablespoons of whole wheat flour
1 teaspoon of cinnamon
a sprinkle of nutmeg
4 teaspoons of powder sugar
Combine all these ingredients with a stick of butter. Crush until well mixed. Empty the mixture in a well greased round pie dish. Press the crust flat on the bottom of the dish and then shape along the sides. Do not trim edges. Fill the crust with 8-10 well ripened peaches cut up in small chunks and 2 tablespoons of whole wheat flour. Add powder sugar to taste 1-2 tablespoons. Don't over do it.
Bake for 35 minutes. After 35 minutes test peaches with a fork to see if they are fully cooked and soft. If they are still not completely soft leave in for 5 more minutes. Let stand and cool completely before serving. Serve warm at room temperature with vanilla soy ice cream substitute.
