Grilled Cheese Tortillas With Hummus and Celery Spread
DRG's grilled cheese tortilla recipe (celery based with hummus)
I've been on a tortilla binge recently trying to invent my very own tortilla snack. Tortillas are a gateway to snacks, I discovered that I can make grilled tortillas instead of grilled cheese. Add banana peppers, pepperoni and some spaghetti sauce for a tortilla pizza. Try fruit preserves in a tortilla for breakfast or a snack.The following recipe is vegetable based, it is so good.
The following recipe can be made in minutes, served in under 10 as long as preps are made.
For preps lets make my celery spread. Here's what you need for this recipe;
1 celery stalk
1/4 clove of garlic
1 pack of tortillas (wheat taste better)
1 container of hummus (flavored to your liking)
Slices of provolone or Swiss cheese per tortilla
dash of cilantro
teaspoon of salt
teaspoon of pepper
teaspoon of sage
teaspoon of vegetable oil
food processor that purees
Flat frying pan
OK, so the 1st step is to make the celery spread. If your not big on celery then use broccoli, asparagus, squash or any other vegetables you'd like.
Put your celery, salt, pepper, sage, cilantro and oil. Now puree for 7 minutes or until finely pureed.
2nd step
Turn your stove on medium and place as many tortillas as your serving on a counter top and spread the celery spread on one half of each tortilla. Place a half of slice of cheese on top of that so that it covers that half. On the other half spread on some hummus and place the remaining half of slice of cheese on the hummus. Now fold in half and sit in pan until cheese melts.
Serve as an appetizers, bread substitute or snack.
