Bear N Mom Recipes - Cookies - Crisp Pastel Cookies
This little gem of a cookie gets it's flavor and coloring from the jello that you use to make these. This recipe was almost lost because I found my stepdaughter's hand written recipe stuck between pages in Nunny's auxiliary cookbook and the ink was hard to read because the paper had picked up a grease spot.
Lisa brought this recipe home from a high school cooking class and we have made them ever since.
- 3/4 cup shortening (butter)
- 1/2 cup sugar
- 1 pkg (3 oz.) fruit jello
- 2 eggs
- 1 tsp. vanilla
- 2 cups flour
- 1 tsp. baking powder
- 1 tsp salt
Heat Oven to 400°
Mix thoroughly shortening, sugar, jello, eggs and vanilla. Blend in dry ingredients
Roll dough into 3/4" balls. and place 3 inches apart on ungreased baking sheet.
Flatten each with the bottom of a glass dipped in either same color jello or sugar
Bake for 6 to 8 minutes. Makes 4 dozen.
You can enhance the color with food coloring but I prefer to roll the cookie in colored sugar to get that added glitter to the cookie.
