Roasted Chicken Leg Quarters!!

- 9 Chicken leg quarters, Or less depending on package
- 1 tbsp Season salt
- 1 1/2 tsp Paprika
- 1 tsp lemon pepper seasoning
- 1/2 tsp black pepper
- 1 tbsp Italian Seasoning
- 2 lemons, sliced
- 2 yellow onions, sliced
- 3 tbsp softened butter
- Preheat oven to 400 degrees. Mix the rub together using all the spices. If you like more paprika or lemon pepper add some to taste. After chicken is thawed, make sure to pat the chicken so the skin is dry. Due to different pan sizes I had to use 3 glass casserole dishes. Place leg quarters in dishes so there is an even layer and none are on top of each other. Smear butter as evenly as possible on the chicken. Sprinkle the rub evenly on all the pieces of chicken. Slice the lemons and onions; add to the chicken again evenly as possible. Stick chicken in the oven. After 10 minutes lower the temp to 375 degrees. Add just enough water to cover the bottom of the pan(s). Cook for an hour and 15 minutes or until a cooking thermometer says 160 degrees.
- Serve with a simple salad, or fresh corn on the cob and pasta. That's what I did.
