2. Cut garlic bulb in half
3. drizzle olive oil and salt over open cloves
4. Wrap in aluminum or place in a ceramic cooking pot
5. Bake at 400 for 45 minutes or until golden and soft like butter.
Storing Roasted Garlic
Roasted garlic should never be stored at room temperature for long. It should be keep in the refrigerator or freezer. After roasting, botulism can harbour within the folds of the paper. This can make a person very ill or even cause death. I would not keep garlic after roasting longer than a week.
Roasted Garlic Compound Butter
Squeeze garlic from bulb into 1/2 cup room temperature butter. Add a pinch finely chopped parsley. Use liberally to make garlic bread. Yum!
