Roasting The Perfect Eggplant

Roasting Eggplants.

To me there is nothing better than cooking your entire meal in the oven, it's delectable the taste is great plus once you finish your prep the oven will do all the rest. So like roasting a a tasty chicken or a tasty piece of lamb, how about roasting some great tasting vegetables like eggplant ,

Here eggplant is roasted in thick slabs that blacken and caramelize on the outside, sealing the juices inside. Serve as an accompaniment to roast-lamb or chicken.

I love roasted vegetables. I'm not a fan of eggplant but do like roasted parsnips, beets, potatoes, carrots and turnips. All great for fall and winter meals.
