Rubbed Mexican Pork Tenderloin With Delicious Sweet Potato's

You will want to start with bacon wrapped pork tenderloins. Use a good grade of bacon to wrap your pork tenderloins with and secure the bacon with toothpicks. Once you have your bacon wrapped pork tenderloins ready take olive oil in your hands and massage it into the pork tenderloins including the bacon. Come on rub that olive oil in there because it will improve the flavor of the finished recipe. Once I rub in the olive oil I then rub in the spices. If you'll rub your spices into the olive oil rubbed tenderloins you'll find that the spices will stay on the tenderloins and they will taste so delicious.

Don't be afraid to make this recipe because it's a lot easier than you think. And when you serve it with the sweet potatoes you have a meal that your not soon going to forget. The tenderloins cooked this way with the sweet potatoes is one of my favorite all time meals. Once you start cooking them and start smelling them cooking it will almost run you crazy waiting for them to get done. Be sure you make my Cheddar Bay Biscuits to go with them. Oh man they are so delicious with the Cheddar Bay Biscuits. That recipe for the biscuits is one of the best recipes I ever created. Be sure you make them and give them a try.

Make up the below recipe for Mexican rub and rub it into your pork tenderloins including the bacon.

Mexican Pork Rub Recipe

2 Tablespoons All Spice.

2 Tablespoons Ground Cinnamon.

3 Tablespoons Brown Sugar.

2 Tablespoons Pasilla Chili Powder.

1 Tablespoon Ground Cayenne Pepper,

Mix all together very well and rub it into the pork tenderloins after they have been rubbed with olive oil. Cook your pork tenderloins to 160 degree internal temperature on your charcoal or gas grill. If you cook them on a charcoal grill cook them over indirect heat. This means that you have the the charcoal fire on one side of the grill and you cook your bacon wrapped tenderloins on the other side of the grill.

Mexican Pork Tenderloin Sauce.

6 Peeled And Fine Diced Granny Smith Apples.

1 Teaspoon Cinnamon.

1 Teaspoon Ground Cloves.

1 Can Diced Tomatoes with Green Chilies.

Mix all the above and puree in your food processor. Serve a tablespoon of this sauce on top of each cooked pork tenderloin.

You can serve your pork tenderloin on a bed of fettuccine noodles that have real butter melted poured in them after you have cooked, washed , and drained your noodles. If you make a 16 ounce box of noodles add 4 tablespoons real butter and 2 tablespoons minced fresh garlic. Place the pork tenderloin on the bed of noodles and then put a spoon of the Mexican Pork Tenderloin Sauce on top of the tenderloin.

You have just created a delicious Mexican dish that everyone is sure to love. This is truly one of my favorite pork dishes ever.

Delicious Mexican Sweet Potatoes

Sprinkle fine chopped cilantro over your cooked sweet potatoes.

Mexican Sweet Potatoes

Peel and cut three pounds of sweet potatoes into 2"X2" cubes.

Spray a 13"X9" baking pan with vegetable cooking spray.

Place your peeled and cut up sweet potatoes into a large mixing bowl.

To that mixing bowl your going to want to add.

3 Tablespoons Olive Oil.

1 Tablespoon Cayenne Pepper.

1 Teaspoon Salt.

1/2 Cup Of Honey.

4 Tablespoons Fresh Lime Juice.

1 Tablespoon Cinnamon.

1/2 Cup Light Brown Sugar.

1/2 Cup Granulated White Sugar.

Stir up and mix the above ingredients all over your cut up sweet potatoes. Bake in the prepared pan for 45 minutes in a 350 degree oven with your pan tightly wrapped with a tin foil top. Serve a small bowl of these sweet potatoes on the plate with the pork tenderloin. Sprinkle your cooked sweet potatoes with fine chopped cilantro.
