Shrimp And Blue Cheese Recipes
Some matches are made in heaven. They compliment each other so well they seem destined to be together. One such perfect union is shrimp and blue cheese. The smooth delicious flavor of creamy blue cheese brings out the shrimp taste we all love. The following recipes give a new twist to cooking shrimp and are both easy to prepare and exciting to eat. Your guests and family will brag for you.
Suzie's Shrimp and Blue Cheese Casserole -
INGREDIENTS
1 lb. cooked 41-50 shrimp
1 can cream- style corn
1/2 cup finely chopped red bell pepper
1/2 cup thinly sliced celery
1/4 cup sliced green onion
1 1/2 tablespoons of butter
For Sauce -
2 tablespoons butter
1 cup milk
2 1/2 tablespoons flour
salt and pepper to taste
3 1/2 ounces of American blue cheese
DIRECTIONS -
Saute celery, red pepper and onion in butter until tender. Combine cream-style corn and shrimp in 2 quart casserole dish. Add sauteed vegetables.
Melt butter and slowly blend in flour. Add milk gradually until thickened, stirring constantly.Stir in blue cheese and salt and pepper to taste. Heat until blue cheese is completely melted and pour over shrimp and vegetable mixture.
Bake in a 375 degree oven for about 35 minutes. This is great served over rice or noodles. Brie cheese can be used if a milder flavor is preferred.
Suzie's Blue Cheese Stuffed Shrimp -
INGREDIENTS -
2 lbs. 10-15 cooked shrimp
3 ounces cream cheese
2 ounces blue cheese
1 tbsp. chopped green onion
3/4 tbsp. fresh parsley
1 tbsp. chopped sweet pickle
1/2 teaspoon hot mustard
DIRECTIONS -
Slit open cooled shrimp, butterfly style, leaving tail intact.
Combine cream cheese, blue cheese and other ingredients. Mix well. Stuff shrimp with cheese mixture. This is great served on romaine lettuce leaves with wedges of lemon.
Suzie's Grilled Spicy Shrimp With Blue Cheese Dip -
INGREDIENTS -
1 lb. 21-25 cooked shrimp
1/2 cup buffalo hot sauce
olive oil
1/2 cup blue cheese
1/2 cup sour cream
1 tsp milk
1 tsp chopped fresh cilantro
2 tsp fresh lime juice
1 chive minced
DIRECTIONS -
Heat grill to medium heat (a George Foreman grill works or even a frying pan). Since shrimp is already cooked, you just want to brush shrimp with olive oil and place on grill for one minute than turn and repeat.
Combine blue cheese, sour cream, milk, cilantro, chives and lime juice.
Dip grilled shimp first into hot buffalo sauce than into blue cheese dip for an out of the world taste sensation.
I prefer to start with cooked shrimp. It's faster and easier.
