Salmon Patties
It is thought that salmon patties originated in France. These tasty little treats are also called salmon croquettes. Croquettes originated in France as tasty little patties of meat and/or seafood, and were not originally thought to include salmon. Regardless, salmon patties or croquettes if you prefer, contain flaked salmon, onions, bread crumbs, and seasonings. My recipe doesn't include celery or peppers, but many recipes do. Mine uses a little lime juice and a splash or two of hot sauce along with bay seasoning. These deep fried fish delights are incredible served with tartar sauce. Enjoy with some french fries and coleslaw for a delicious meal.

- 1 16 oz can pink salmon, skin removed, deboned, & flaked
- 1 large egg
- 1/2 small onion, diced small
- 1 cup italian bread crumbs
- 1 tbsp lime juice
- 1 tsp bay seasoning
- 1 tsp parsley, dried kind
- 1/2 cup sour cream
- 1/2 tsp black pepper, course ground
- 1 tsp hot pepper sauce
