Forget to get an essential ingredient? Here are some quick and almost-as good substitutions.
1 teaspoon baking powder:
Use 1/2 teaspoon cream of tartar plus
1/4 teaspoon baking soda.
1 cup sugar: Use I cup packed
brown sugar or 2 cups sifted powdered
sugar.
1 cup dairy sour cream:
Use 1 cup
plain yogurt.
1 cup buttermilk:
Use 1 tablespoon
lemon juice or vinegar plus enough
whole milk to make 1 cup (let stand
5 minutes), or 1 cup whole milk plus

4 ounces German sweet chocolate
Use 1/4 cup unsweetened cocoa powder
plus 1/3 cup sugar and 3 tablespoons
shortening.
1 teaspoon apple pie spice
Use
1/2 teaspoon ground cinnamon plus
1/4 teaspoon ground nutmeg,
1/8 teaspoon ground allspice, and dash
ground ginger.
