Casseroles are Great!
I find that making casseroles serves several purposes. For one thing, they usually mess up fewer dishes than other meals. It is also an easy option if you need to carry a dish to a friend's home, whether you're joining them or you're simply helping them out. In our home, casseroles can be a blessing because they can be assembled beforehand and thrown in the oven by anyone in the house. Casseroles can also be a melding of many family members' favorite foods or flavors.
One of my kids said that this is better than a "real" taco! I thought it was good, too. Everyone had two servings of it.This is a great go-to meal if you're not sure what to fix. This is a great use for old tortilla chips that are too stale for dip but too good to throw out!

1 can crescent rolls
1 c. canned corn kernals, drained well
1 lb taco meat
8 ozs. sour cream
1 c. Mexican cheese shreds
1 c. (or more) crushed tortilla chips
Spread crescent rolls in the bottom and up the sides (to 1") in a 9x13 pan. Layer in this order on top: corn, meat, sour cream, cheese, chips. Bake at 350° for 30 minutes.
