The Curry Wars: Grilled Curry Chicken
Getting things together
Non Edibles you're going to need:
You are going to need a grill or something that can get the job done for this recipe.
Tongs
Basting brush or spoon
a few plates for serving
a few plates for raw chicken
then fresh plate for cooked chicken
aluminum
Ingredients:
6 Chicken Breasts
2 Tsp Curry Powder
3 Tbsp Apple Jelly
1 Tsp Salt
6 Pineapple Rings
2 tsp water
Side:
Sweet Potatoes (Fries work great!)
Getting your Grill going
Prepare your grill for indirect heat.
If it is an electric or gas grill, 2 opposite burners.
If it is a charcoal grill, make a ring (in the round) or put the charcoal in just one side of the grill.
Getting your cook on
While your grill is heating up:
Whisk the apple jelly with 2 tbsp water, set it aside. You may make some extra using the same recipe, and use it as a sauce for when the chicken is done.
Sprinkle a little salt and curry powder on both sides of each chicken breast.
Grill on direct heat (on the burners that are on, or on the ring/side with the charcoal) For 5 minutes on each side of the chicken to get a good sear. If you want to be fancy and do the criss cross pattern, at 2 1/2 minutes, take your tongs and rotate the chicken at a 1/4 turn. That will get the criss cross on the chicken. Honestly my family doesn't notice. They eat it too fast to tell if I even grilled it at all! Lol
Transfer to the indirect heat and cover
Bake/grill for 30-40 minutes. Brush with the apple jelly mixture about 5 minutes from the end. Do not turn the chicken more than the one time to baste the apple jelly on both sides! Leave it be. Chicken gets confused when its cooking... Just let it do its thing. You'll lose the moisture if you play with it. You should have a total of twice turning the chicken. Once when on direct heat to sear both sides, then the once time to get apple on the other side of the chicken.
At the last 10 minutes of the chicken, grill the pineapple rings about 1-2 minutes on each side, direct heat.. you just want the grill marks on them and let them be a little warm.
Also, while the chicken is on its bake time, go ahead and make the sweet potatoes as per the direction of your choice on my other hub.
When the chicken is finnished
Let it sit on a plate for about 10 minutes under aluminum, before serving. To let the juices go back through the meat.
To serve, place a chicken breast on the plate, side it with the sweet potatoes, and place the grilled pineapple ring on top of the chicken.
