Vegetarian Lentil Soup Recipe
This lentil soup recipe is very easy to make. This recipe is vegetarian because it uses vegetable broth. You can substitute chicken broth for the vegetable broth if you wish. For another variation of this soup, add a can of diced tomatoes.
This recipe can also be made in a crock pot with a few modifications. You will need to soak the lentils in water over night. Cook the soup in the crock pot for two hours on high, and then reduce heat to low for about 4 hours. The lentils will not cook completely on the low setting on most crock pots. Soaking the lentils overnight also helps the lentils to cook faster and more completely.
Ingredients
One Tablespoon of Olive Oil
One Cup of Dry Lentils
Four Cups of Vegetable Broth
One Diced Onion
One Sliced Carrot
Two Sliced Celery Stalks
One Clove of Minced Garlic
Two Bay Leafs
One Half Teaspoon of Dried Thyme
Salt and Pepper to Taste
Directions
- Heat the olive oil in a large pot over medium heat. Saute the onion, carrot, celery, and garlic for about five minutes.
- Add the vegetable broth, bay leaves, thyme, salt and pepper.
- Bring to a boil. Reduce heat and simmer covered for about 45 minutes to an hour. When the lentils are soft, the soup is ready.
