Pumkin and Butternut Squash Recipes
Pumpkin is full of vitamins, available all winter long, and tastes great in a number of dishes. These recipes work well with pumpkins or other small squashes, such as butternut squash or acorn squash. Note that each squash has it's own unique flavor. If there is one that you prefer, go with that. I like butternut squash in part because you can buy it prepped in the produce section.
Pumpkin or Butternut Squash Soup Recipe
One of the easiest ways to use a small pumpkin is to make it into a blended soup.
Cut the pumpkin in half. Remove seeds and reserve for roasting.
Steam the pumpkin halves until the flesh removes from the skin easily.
Add the pumpkin flesh to 4 cups chicken broth.
Add 1 tablespoon of course ground black pepper, a teaspoon of rosemary, and a pinch of sea salt.
Blend until smooth.
Add 2 tablespoons of sour cream and serve.
How to Make a Pumpkin Pizza
Take a pre-made crust and cover lightly with pizza sauce.
Then, add cubes of cooked pumpkin, caramelized onions, and goat cheese.
Bake for 12 minutes at 400 degrees.
