I canned about 10 cases of tomatoes with a group of friends this weekend.
We've...
been doing it for the last 5 years. We do put them in a water bath but this year, the person timing the water bath only kept them in for approximately 25 -30 minutes. The water was at the boiling point for each batch.
We clean, chop and cook the tomatoes until they come to a full boil as well before putting them into the jars.
My concern is that we usually boil the jars in the water bath for a full 45 minutes. Will the shorter time in the water be of concern.
Every jar popped and sealed. Need your opinion even though your recipe does not include a water bath.

This won't be a problem at all -- the important thing is that the jars popped and sealed!

Can I use fresh instead of canned tomatoes?I would like to use fresh tomatoes since I don't have canned. I have tomato sauce if that would help. It's a crock pot taco soup. Can I just cook them the same way I would make homemade spaghetti sauce?
