Today I wanted to change things up and have some breakfast for dinner and when I said that to my family my father was the first one to say get to cooking but the problem with that is he is diabetic so I really have to watch what I prepare for him so today I decided to make some Strawberry Cinnamon French Toast that is very diabetic friendly and the taste is really awesome.
Strawberry Cinnamon French toast
Ingredient
1 egg
1/4 cup of fat free skim milk
1/2 teaspoon of vanilla
4 (1 inch thick) diagonally cut slices of Italian bread (about 1 ounce each)
2 teaspoons of reduced fat margarine
2 packets sugar of substitute
1/4 teaspoon of ground cinnamon
1 cup of sliced strawberries
Fresh mint leaves, for garnish (optional)
Methods
Let’s start by preheating oven to 450. Spray nonstick baking sheet with nonstick cooking spray; set aside. Beat egg, milk and vanilla in shallow dish or pie plate until blended. Dip bread slices in egg mixture until completely coated and all egg mixture is absorbed. Place on baking sheet; bake 15 minutes allowing the bread to get a nice golden brown crust then turn over at the halfway point of baking time. While the French toast is baking add your margarine, sugar substitute and cinnamon into a glass bowl mix together very well until the mixture is completely blended. Remove your French toast from the oven then add you’re topping over top of your French toast serve and enjoy. Top off with mint if you like.
