Easy Coconut Cream Pie

I have always loved coconut cream pie and this is the way I make it. The fact is it's my favorite pie.

This is what my Mom makes for me when I go home. Her pie is from scratch mine's not.
I make it the fast way.

Coconut Cream Pie A Favorite.

The Pie Crust Comes First

My mother used the pie crust from her old Victory Cookbook. You can also use store bought pie crust works just as well and much easier.

Here is the recipe she used:

Hot Water Pastry

2 cups sifted flour

1/2 teaspoon baking powder

1 teaspoon salt

1/3 cup boiling water

2/3 cup shortening

Sift flour, baking powder and salt together set aside.

Pour water over shortening and mix with a fork until creamy.

Add flour mixture and mix into a dough.

Chill thoroughly.

Roll out on floured board to the desired size. This will make one deep dish pie shell.

Easy Coconut Cream Pie

1 4.6 oz. box of Vanilla Jell-O pudding cook and serve

4 eggs

1 cup of cream

2 cups whole milk

1 1/2 cups of coconut

1 Deep Dish Pie Crust

Cook your pie crust first by directions on package. Let it cool.

Use only egg yolks in the pie, set aside egg whites for the topping on pie. I mix my egg yolks with my cup of cream first.

In a medium size pan add cream mixture, milk and pudding. Bring all ingredients to a boil making sure to stir as it cooks. If you don't stir it will burn on the bottom. The minute it starts to boil remove from heat and keep stirring. Add coconut stir and pour into pie crust.

How To Make Meringue

Take egg whites and add to the mixer bowl with 1/4 tsp. of cream of tartar. Whip egg whites until fluffy and stiff. Top pie with egg whites. Sprinkle with some coconut, place under 500 boiler and lightly brown top of the egg whites. Keep a constant eye on the egg white topping it will burn fast.
