How to make the most Delicious Indian Vegetable Omelet

My mom was an amazing cook, but she was never one for recipes. I would call her up after my husband and I moved in together and say "mom what do you put in your chili?" She would say " A little bit of this" or "Quite a bit of that." Frankly this drove me crazy! The older I get, the more I realize where she was coming from. I really do not enjoy writing recipes. What I enjoy is a great tip or shortcut, that makes food more delicious or easier to prepare. This Delicious Indian Vegetable Omelet is my husband's favorite breakfast. I have prepared it hundreds of times. I am excited to share it with you. I should also mention all of the photos in this page belong to me and were taken during the cooking process.

What you need to make this Spicy Indian Omelet

  1. Eggs
  2. Salt
  3. Pepper
  4. Butter or Margarine (I use Smart Balance)
  5. Turmeric Powder about 1/2 tsp
  6. Red Chili Powder - to taste, use sparingly if adding Jalapenos.
  7. Vegetables- today I am using Green Bell Pepper, Jalapeno Pepper, Onion, and Cilantro

Here is the number one secret to a delicious vegetable omelet. Sautee Your vegetables before adding your eggs. This allows you to have that delicious, natural, crispy flavor of your veggies inside of your beautiful omelet. First add your butter, next add veggies, then add all of your spices. Adding spices at this point is also important, because sauteeing the spices brings out their natural flavors. Sautee everything for about 2 minutes. Then just add your eggs and finish up your omelet.
