Fast Mexican Recipes for the Busy Vegetarian. I'm always looking for a fast and easy cooking for a vegetarian meal like burritos. One of my favorite quick meals is made from frozen cheese and bean burritos. Of course I add some veggies to the meal to round it out and make the most out of nutrition.

I start with a prepackaged burrito add lots of veggies, salsa, and dairy products just like Mexican recipes suggest. The plain frozen burrito takes on a gourmet appearance and taste as good as it looks and taste like most real Mexican recipes. If takes about 5 minutes to prepare and when you come home from work tired and hungry that it certainly a bonus. You probably didn't even have the strength to wait in line at a fast food restaurant or the grocery store. I know I don't.

Here's the package I start from. Just enough calories to make a good dinner. I love Mexican recipes and this one is so easy I make it often. My family just can't get enough of it.

Finished Meal in About 5 Minutes

This is what the finished product looks like in about 5 minute it's one of my easiest Mexican recipes. Maybe you can do it faster, but that's about how long it take me to Microwave the burrito and chopped the veggies. You could do it faster if you pre-chopped everything before hand.

My family feels like they are sitting down to a gourmet meal when I prepare them. They are nutritious and provide the basic food groups. The calorie content is mostly from the burritos themselves, since we all know that the veggies are low in calories. Choose cheese or vegan style substitutes for toppings, grated or sliced. Most Mexican recipes require a lot more work than this one.

I always use a real plate rather than a paper one, it just makes it feel special that way. Besides there is very little clean up since there are no pots or pans to clean afterward.

Dressed Burrito Recipe

2 burrito recipe

Ingredients:

2-frozen burritos

lettuce

tomatoes

green or sweet onion

cheese or cheese substitute

sour crème (Light)

premade salsa

Prep:

Place 2 burritos on to a large plate and microwave 1 minute. Turn over the burrito and cover with cheese, microwave 1 more minute. (It' Done)

While waiting for the burritos to microwave chop lettuce, tomatoes and onion.

Remove burrito from the microwave. Dress with lettuce, tomato and onion, top with sour crème and salsa.

I love burritos and once I top them with veggies and sauces the are just the same as eating one in out. After a hard days work it is nice to relax at home and enjoy a meal without all of the distractions of eating in a restaurant. You can slip into something comfortable, turn on your favorite TV show, or just listen to music. I love to eat at home, it is much more relaxing than rushing through a meal with noisy people sitting all around.

If you like eating in too this is the perfect meal for you. Little work to make and if you cook on a paper plate the clean-up is quick too. Take my advice stay in and learn to relax at dinner.
