Making Vegetarian Focaccia For a Meal

Make Focaccia Italian Cooking for a Vegetarian Family Favorite for Lunch. Foccacia to make for a vegetarian lunch. You want something special and it should taste delicious. I have the perfect lunch for you. Focaccia. You can make it with canned vegetable or my favorite way with veggie fresh from my garden the real cooking way.

Vegetarian focaccia is easy to make an a very impressive vegetarian meals. Focaccia can be prepared in advance and reheated or eaten cold as a snack. It is also something that can be taken in lunch boxes and for picnics. Many people use a variety of vegetables to top the focaccia, which adds nutrition, color and flavor to it.

Fresh vegetable are used traditionally for Italian cooking, however, in a pinch frozen cooked vegetables can be used. Many people find that left over vegetable are also suitable for their focaccia.

Focaccia Style Recipes

Focaccia Recipe - Fresh is Best

Old Fashion Focaccia Recipe

Ingredients for crust :

2 cups flour

1/3 cup lukewarm water

1 package of dry yeast

1 teaspoon sugar

1/4 teaspoon salt

1 ounce (2 tablespoons) olive oil

In a large bowl add lukewarm water, sugar and yeast stir and let set for 2 minutes. Add salt and stir. Then add half of the flour and stir in lightly, do not over mix. Next add the rest of the flour stir until all of the flour is moistened. Lightly oil your hands and knead until smooth. Oil the bowl, place mixture back into the bowl and left it rest in a warm place. Cover with a clean cloth or towel to keep the mixture warm. The yeast is now at work, raising the dough. When the dough has increased in size to about double oil your hand again and knead lightly, stretch into your cookie sheet or pizza pan. It should be approximately 1/4 inch thick oil the top. Let the dough rest while you prepare the topping.

Topping

2 small Roma tomatoes

1 small zucchini squash

4-5 fresh basil leaves

2 cloves of fresh garlic

1 small onion

1/4 cup grated parmesan cheese

Optional Ingredients:

black or green olives

fresh mushrooms

fresh oregano

fresh thyme

These ingredients may be added or substituted for the above.

Chop or slice fresh tomatoes,zucchini, basil, garlic and onion, Then grate parmesan cheese.

Next place topping on top of the focaccia crust evenly and sprinkle the grated cheese as the to layer.

Bake in a 450 degree (220 Celsius) for 20 to 25 minutes until brown. Cut and server for lunch or as an appetizer. It traditionally served with a dark red wine.
