Turkey Italian Wedding Soup
Ingredient
Turkey Meatballs
1pound of lean ground turkey
1/2 cup finely chopped onion
1 garlic clove, minced
1/4 cup of chopped fresh parsley
1 egg, beaten
1/4 cup whole-wheat breadcrumbs
2 Tablespoons of grated Parmesan
Soup
8 cups of lower sodium chicken broth
2/3 cup whole-wheat orzo
3 cups coarsely chopped escarole
Method
For the meatballs, in a large bowl combine beef, onion, garlic, parsley, egg, breadcrumbs, 2 tablespoons Parmesan, and pepper to taste; mix gently to combine. Form into 1-inch balls, and place on a baking sheet. Set aside. In a large pot bring broth to boiling. Add orzo and meatballs. Return to boiling; reduce heat to low. Simmer 8 minutes. Stir in escarole; cook 2 to 3 minutes more or until escarole is wilted and meatballs are heated through. Ladle soup into bowls, top with additional Parmesan if desired, and serve.
