Turkey Cutlets with a Mix Berry Chutney
Ingredients
1 Tablespoon of canola oil, divided
1/3 cup chopped red onion
2 cups unsweetened frozen cherries, thawed, drained and coarsely chopped
1/3 cup dried cherries
1/3 cup light brown sugar
1 tablespoons of imported balsamic vinegar
1/2 teaspoon of ground ginger
4 (4-oz.) turkey cutlets
4 teaspoons of sliced almonds (optional)
Methods
To begin with this dish let’s start with the chutney, in a small saucepan heat 1 teaspoon of the oil over medium heat sauté the onions and cook for 2 to 3 minutes or until softened. Stir in chopped cherries, dried cherries, brown sugar, vinegar and ginger. Cook 6 to 8 minutes or until slightly thickened.
Meanwhile, season cutlets with pepper to taste. In a large skillet heat remaining 2 teaspoons oil over medium heat. Add cutlets; cook 3 to 4 minutes per side or until no longer pink (165°F). Transfer cutlets to individual plates. Top with chutney, sprinkle with almonds if desired serve and enjoy.
